Brown Rice!
I have converted to brown bread, wholemeal, porridge, meusli and brown pasta - and I am happy with all of that. There is one area that I have yet to master, and I'm looking for advice here, is brown rice. I have a packet in the kitchen and dig it out from time to time, cook some, throw it away and leave it for a few months. Can anyone please suggest a good way of cooking it and some interesting recipes?
Well Diane - after a bit of a delay I "took your advice about rice and the result was far more than nice!" I did all that you recommended - used some interesting spices and served the result with a stir fry. My wife greatly enjoyed it, went back for more but never realised it was brown rice, even when I asked if she noticed anything at all different. So a great breakthrough - for the first time for me brown rice was really an enjoyable experience

Sounds like you are really getting into healthy eating.
I’ve tried many ways of cooking brown rice but find it is best to cook it for longer than it says on the packet and use more liquid. You might like to try out (Try this) recipe -
brown rice (whichever type you prefer)
water – use at least four cups of water for every one cup of rice
season to taste – perhaps experiment with some fresh herbs and/or different spices
Rinse rice under cold running water for 30 seconds. Bring water to boil in a large pot over high heat. When water boils, add the rice, stir it once. Turn heat to medium and boil, uncovered, for 30 minutes, stirring occasionally. After 30 minutes, pour the rice into a strainer over the sink. Let the rice drain for 10 seconds, then return it to the pot, off the heat. Immediately cover the pot with a tight-fitting lid and set it aside to allow the rice to steam for 10 minutes (if your pot lid isn’t extremely tight, place a piece of aluminum foil over pot then place the lid on top of foil for a tighter seal). After ten minutes, uncover rice and fluff with a fork.
